Long-serving chef Pablo Soto will assume the role of executive chef at the restaurant going forward.[1] The establishment will introduce a new monthly rotating menu format as it charts its next chapter.[1] However, Noma will lose its three Michelin stars, as the restaurant does not meet the required operating duration for 2026 to retain its recognition.[1] Soto acknowledged the scrutiny surrounding the restaurant's transition, stating: "There's been a lot of media attention and questions about what we're doing, but we're still here standing."[1]
The revamped Noma is priced at 6,500 Danish kroner, approximately 1,000 US dollars, per person with wine pairings included.[1] The first three months of operation have already accumulated nearly full bookings through the end of October.[1]
